Parent Recipe
This recipe was submitted by Dianne Smith (George Pyer's mum), Zucchini and Corn fritters!!
½ cup (75g) plain flour ½ cup (75g)self-raising flour 2 eggs ½ cup (140g) yoghurt ½ teaspoon caster sugar 420g corn kernels, drained 2 small zucchinis (180g), coarsely grated 2 cloves garlic crushed 1 small red onion (100g), finely chopped 2 tablespoons finely chopped fresh basil 1 tablespoon finely chopped fresh tarragon ¼ cup (20g) finely grated parmesan cheese 2 tablespoons olive oil ¾ cup crème fraîche 1/3 cup (50g) pine nuts, roasted 1/3 cup fresh baby basil leaves
1. Combine flours in a large bowl; whisk in eggs, yoghurt and sugar. Stir in corn, zucchini, garlic, onion, chopped herbs, stand for 15 minutes. 2. Heat oil in large frying pan; cooked heaped teaspoons of mixture, in batches, until browned both sides. Cool on wire racks. 3. Serve fritters topped with crème fraîche, pine nuts and basil leaves. N.B. Fresh corn can be used instead of canned. Use 2 corn cobbs. |
